Chef´s Choice – Homemade BBQ-Sauces
Harissa-Style Hot Sauce
Summertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.
Your imagination has no limits, changing and complementing the recipes to your taste!

Ingredients
- 150 ml ketchup
- 1 red bell pepper, seeded and diced
- 4 fresh chillies, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, crushed
- 2 tbsp sugar
- 1 tbsp medium hot mustard
- 1 tbsp coriander seed, crushed
- 1 tbsp cumin, crushed
- 1 tbsp lemon juice
- salt, freshly grounded black pepper
- 2 tbsp olive oil
Preparation
Heat olive oil in a big enough saucepan over medium heat.
Add ketchup, bell pepper, tomatoes, chillies, sugar and garlic. Bring to a boil, stirring permanently.
Reduce heat to low, add mustard, coriander, cumin and lemon juice. Simmer the whole lot, stirring occasionally, until the sauce has thickened. Season with salt and black pepper to your taste.
If you want a smoother ketchup-like consistency of the sauce, simply shred the mixture in a food processor or with a hand blender for a few seconds.
Let the sauce cool down before serving.
