Cypriot Recipes – Misket Köfte
(Sauced Meatballs on Mashed Potatoes)

• 2 potatoes
• 1 tablespoon of butter
• 200 grams minced chicken
• 1/2 small green or red bell pepper
• 1 clove of garlic
• 2 champignon mushrooms
• 1 spring onion
• 1/2 cup of cream
• gravy powder
• a little bit of “Kaşar-Cheese” (you can get in every supermarket over here)
• 1/2 onion and 1 sprig of parsley for decoration
Cook the potatoes in boiling water for about 25 to 30 minutes (depends on the size). Peel them and mash them with a fork, add milk and butter, mix well until it is a creamy mass, season it with salt and black pepper. Put the mashed potatoes aside.
Add salt, black pepper and finely chopped bell pepper to the minced meat, knead it together and form little balls with wet hands.
Cut the mushrooms into quarters, chop the garlic, put all together with the meatballs into a pan and fry it.
Add the grated Kaşar-cheese, cream, chopped spring onion and gravy powder, bring it nearly to the boil, reduce heat and simmer it until the sauce thickens. If you don´t like the sauce too creamy, add water or a little bit of table wine.
Form a bed of mashed potatoes, put the sauced meatballs onto it and decorate with sliced onions and leaves of parsley.
