Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 500g tomatoes, skinned, deseeded and finely chopped (or take 400g canned tomatoes)
  • 3 garlic cloves, finely chopped
  • 85g brown sugar
  • 3 tbsp malt vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • salt and freshly ground black pepper

Preparation

BBQ Tomato SauceHeat the oil in a saucepan over medium heat and add the onion. Cook about 4-5 minutes, until the onion pieces are slightly brown and softened.

Mix in the remaining ingredients and bring the sauce to the boil stirring constantly, then reduce heat and simmer for 20-30 mins, until the whole lot has thickened. Stir occasionally that nothing adheres to the bottom of the pan. Season with salt and pepper to taste.

If you want a smoother ketchup-like consistency of the sauce, simply shred the mixture in a food processor or with a hand blender for a few seconds.
