
Chef´s Choice – Homemade BBQ-Sauces
Simple and tasty Tomato Sauce
Summertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.
Your imagination has no limits, changing and complementing the recipes to your taste!

Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 500g tomatoes, skinned, deseeded and finely chopped (or take 400g canned tomatoes)
- 3 garlic cloves, finely chopped
- 85g brown sugar
- 3 tbsp malt vinegar
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- salt and freshly ground black pepper
Preparation
Heat the oil in a saucepan over medium heat and add the onion. Cook about 4-5 minutes, until the onion pieces are slightly brown and softened.
Mix in the remaining ingredients and bring the sauce to the boil stirring constantly, then reduce heat and simmer for 20-30 mins, until the whole lot has thickened. Stir occasionally that nothing adheres to the bottom of the pan. Season with salt and pepper to taste.
If you want a smoother ketchup-like consistency of the sauce, simply shred the mixture in a food processor or with a hand blender for a few seconds.
