White Capers Sauce
Summertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.
Your imagination has no limits, changing and complementing the recipes to your taste!

- 60 g butter
- 40 g wheat flour
- 250 ml dry white wine
- 1 medium size onion, finely chopped
- 1 egg yolk
- 125 ml cream
- 1 tspn sugar
- capers (to your taste), chopped
Preparation
Prepare a light roux from butter and flour in a skillet over medium heat. Deglaze with the white wine.
Add the onions and cook through briefly.
In a bowl mix the yolk with cream and sugar and add the mixture to the sauce.
Carefully mingle in the capers and let the whole lot simmer on low heat for a few minutes.
Goes well with grilled poultry and fish.
