Tomatoes and Hellim Cheese
in Walnut Dressing

Now, as temperatures rise and rise, I interrupt my series “Cypriot Recipes” and and start with a series of recipes that I call “Summer Kitchen”.
The important thing is that your time in the kitchen is limited to a minimum and the dishes are light and easy to digest.

Ingredients
8 medium sized ripe tomatoes, thickly sliced
150 g Hellim / Halloumi cheese, thickly sliced
25 g walnuts, chopped
60 ml olive oil
1 clove garlic, crushed
1 1/2 tbsp vine vinegar
2 tspn mustard, medium hot
2 tspn fresh thyme, chopped
2 tspn sugar
– Combine the olive oil, vinegar, sugar, mustard and garlic and mix a dressing.
– Add the walnuts and the thyme, stir gently.
– Place slices of tomato on a serving plate, top with a slice of cheese and sprinkle it with dressing. Repeat this 2 times and top the little “tower” with a slice of tomato.
– Serve with some green or black olives and Ciabatta bread or baguette.
