Chef´s Choice – Homemade BBQ-Sauces
Full Tomato Flavour Sauce
Summertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.
Your imagination has no limits, changing and complementing the recipes to your taste!

Ingredients
- 200 – 300 g concentrated tomato paste (no ketchup)
- 1 tspn dried oregano
- 2 tspn dried rosemary
- 1 tspn dried thyme
- 3 tbsp sugar
- 4 cloves garlic, crushed
- 1 tbsp hot pepper sauce (e.g. Tabasco)
- 1 tbsp soy sauce
- red wine vinegar
- salt, freshly ground black pepper
Preparation
Heat 100 to 150 ml of water in a saucepan over medium heat. Stir in the tomato paste, oregano, rosemary, thyme and sugar. Mix well.
Bring to a boil, stirring constantly. Then reduce heat, add the garlic, hot pepper sauce and soy sauce and let the whole lot simmer for 5 to 10 minutes, stirring occasionally.
Season with vinegar, salt and pepper to your taste.
The consistency can be modified either by prolonged simmering or by adding more water.
Let the sauce cool down before serving. To get the full flavour, put it into the fridge over night.
