Chef´s Choice – Homemade BBQ-Sauces
Sweet-hot Diablo Sauce
Summertime is BBQ time. And a good barbecue meal tradtionally includes delicious sauces. Of course, nowadays you can find a wide range of prefabricated sauces in the supermarket shelves, but it’s also fun to create your own sauces. To give you readers a few suggestions, I publish a little series of quick and easy recipes for homemade barbecue sauces.
Your imagination has no limits, changing and complementing the recipes to your taste!

- 350 ml ketchup
- 100 g brown sugar
- 60 ml honey
- 100 ml red wine vinegar
- 60 g butter
- 1 medium size red onion, finely chopped
- 2 red chillies, finely chopped
- 3 cloves garlic, finely chopped
- 1 tspn cayenne pepper
- 1 tspn hot paprika powder
- salt and freshly ground black pepper
Preparation
Mix ketchup, sugar, red onion, honey, vinegar, butter, chillies and garlic in a saucepan. Bring to a boil, stirring permanently.
Reduce heat to low, add cayenne pepper and paprika powder. Simmer the whole lot, stirring occasionally, until sauce is slightly thickened. Season with salt and black pepper to your taste.
If you want a smoother ketchup-like consistency of the sauce, simply shred the mixture in a food processor or with a hand blender for a few seconds.
Let the sauce cool down before serving.
