Cypriot Meatballs (Köfte / keftedes)
Meatballs are a worldwide popular dish. A meatball is always ground or minced meat rolled into a small ball, sometimes along with other ingredients, such as breadcrumbs, minced onion, eggs, butter and seasonings. Meatballs are cooked by frying, baking, steaming, or braising in sauce.
Cypriot meatballs are always made with ground pork or beef and grated raw potato and are full of flavour of Cyprus which can be mint or cinnamon or lemon or a mixture of all.

Ingredients
1 kg minced meat (beef or pork or a combination of both)
3-4 potatoes, grated
3/4 bunch parsley, finely chopped
2 onions, finely chopped
2 eggs
dried mint
oil for deep frying
2 slices of bread soaked in water and strained
cinnamon
salt, pepper
Preparation
– After draining the grated potatoes add them to the minced meat.
– Add the rest of the ingredients, parsley, bread, onions, eggs, mint, cinnamon, salt and pepper.
– Mix well and mould into oval or round balls.
– Deep fry in oil.
– Accompany with fried potatoes and salad.

I love keftedes, my mum makes them PERFECTLY! But…why say deep fry and show a shallow fry here?! Misleading!!!
